李永辉,本科及硕士毕业于浙江大学化学工程系和生物系统工程系,博士毕业于美国堪萨斯州立大学谷物科学系,现为该校谷物化学副教授。研究方向为谷物蛋白化学结构、改性及功能,蛋白结构的纳米组装,生物活性分子及活性肽,功能性谷物食品,及烘焙化学,在Food Chemistry, Journal of Agriculture and Food Chemistry,Journal of Functional Foods, Trends in Food Science and Technology,LWT, Journal of Cereal Science, Advanced Materials, Biomacromolecules, Polymer, ACS Sustainable Chemistry & Engineering, JAOCS 等重要学术刊物发表论文40余篇,申请美国专利一项,多次组织和主持国际会议研讨会,担任20余本国际期刊特约审稿人。主持了由美国农业部,堪萨斯小麦协会、大豆协会、玉米协会, PepsiCo, Johnsonville等机构资助的多个科研项目。 | |||
